Chicken Noodle Soup
1 cup each of chopped celery, onions, carrots (mirepoix)
2 tblsp oil - canola
2 tblsp flour
1 quart chicken stock
2 cups water
1 (at least) garlic clove
bay leaf
6 pepper corns
some salt
1/2 to 1 pound of chicken
1 cup of pasta (I used elbow macaroni)
In a soup pan add the oil and sweat the mirepoix for at least 5
minutes.
Add some flour and cook it until it browns a bit
Add the stock and water
Add the bay leaf, pepper, garlic and salt
Add the chicken & pasta
Cook until the chicken is done. Maybe 15 minutes.
I used chicken tenders. Breast will work. Dark meat is best.
Dumplings for two people - expand for more.
1/3 cup flour
3/4 tsp baking powder
1/4 tsp sugar
1/8 tsp salt
1 tsp butter melted or very soft
2 tblsp plus 2 tsp milk
Make 4 small spheres
Cook for about 15 minutes.
