Simple dirty rice

One quart sauce pan with lid.
Small to medium onion
Some oil
Salt and pepper
One cup of rice
One 14.5oz chicken or beef broth

Turn a back burner on low low for later use.
Chop up the onion and saute in the pan with a little oil, salt and pepper.
When the onions are nearly done add the broth.
Cover the pan and bring it to a boil.
Add the rice, stir, cover and bring back to a boil.
Stir once again and move the pan to the warm burner.
Wait 20 minutes. It should be done but if it looks watery then leave it for five more minute and check again.
Fluff it up with a fork and it's ready to go.
You could add something like dried thyme at the end to add an aroma.
If it sticks to the pan the burner was up too high. If it continues to be runny the burner wasn't high enough.

If you don't eat all the rice, put it into a 1 quart freezer bag and store it in the refrigerator. When you want to eat it, warm it up in the microwave about 20 seconds at a time, squeezing the bag in between microwave blasts.
