This tends to be an egg dish rather then like a cake.
I used six small plums cut in half. Many things also work like
apricots, apples, berries, etc.
3 tablespoons of sugar (I used Splenda)
1 & 1/3 cups of milk
1 1/2 teaspoons grated lemon zest (or tablespoon lemon juice)
2 teaspoons vanilla
1 pinch of salt
1/2 teaspoons of cinnamon
2/3 cups of all
3 tablespoons of sugar for preparation
2 tablespoons of confectioners sugar for fun
Oven at 375
Butter a 10" pie plate or a 9" square pan
Sprinkle 1 tablespoon of sugar over the bottom.
Place fruit over the bottom.
Sprinkle 2 tablespoons of sugar over the plums
In a blender mix 3 tablespoons of sugar, eggs, milk, lemon zest,
cinnamon, vanilla, salt, flour.
Add the flour last so it will blend properly
Pour over the plums.
Bake for 55 minutes until firm and well browned. Not a second
less. Let stand for at least five minutes.
Sprinkle confectioners sugar over the top. Eat. Yum!
